Full day of eating vegan

Hey peeps!

I hope everybody is okay during this Corona virus time. It’s important to take care of yourself and your dearest ones, and stay healthy. That said, what better way to be healthy then feed your body with nutrient dense food. I made this full day of eating vegan video, where I capture 3 high protein vegan meals I eat on a regular basis. I’m the type of girl that obsesses over certain dishes for a period of time until I get tired of them and need to find something else 😛

 

 

The calories stated in the video are approximate estimations. For exact results please scan in your food by yourself 🙂

Here are the exact ingredients I used in the video:

 

Vanilla Protein Porridge

Ingredients:

  • 1/2 banana
  • 50g of oats
  • 30g of peanut butter
  • 10g of chia or flax seeds
  • 1/2 scoop of vegan vanilla protein
  • A pinch of cinnamon
  • 100g any plant-milk really but I like to use oat or almond milk

 

Toasted Avocado & Hummus Sandwiches

Ingredients:

  • 2 pieces of bread with high protein intake (For my peeps from Denmark: I always use Pågen Solsikkestykker)
  • Chili hummus
  • Sriracha Mayo
  • Salad/vegetables of your choice (I usually use much more than in the video but I ran out of veggies haha)
  • 1/2 avocado
  • Seasoning of your choice (I used a blend of chili and garlic)

 

Beans in tomato sauce with brown rice & a nourish bowl

Ingredients:

Beans & Rice

  • 1/2 a can of beans in tomato sauce
  • 50g of brown rice
  • Chili hummus

Nourish Bowl

  • Butternut squash (cut into small pieces, seasoned with a garlic salt blend, rosemary and olive oil and roasted in the oven for ca. 30min)
  • Sweet potato (cut into small pieces, seasoned with a garlic salt blend and roasted in the oven for ca. 30min)
  • Grated Beetroot
  • Spinach & carrot salad blend
  • Capers
  • Pickled red cabbage
  • Sesame & pumpkin seeds

Dressing (2 portions)

  • 4 tbsp of Tahini
  • 2 tbsp of Apple Cider Vinegar
  • 2 tbsp of Dijon mustard
  • 4 tbsp of Almond Milk
  • Juice of 1 Lemon
  • Salt & Pepper
